Salsa Verde Recipe

Since we live in Southern Arizona and close to Mexico, we can get ours hands on some interesting foods. I had recently received a few bags of tomatillos, and knew exactly what to make, SALSA VERDE!!!

What are Tomatillos?

Tomatillos are a fruit native to Mexico, and are commonly used in Mexican cuisine to make salsas, sauces and more.
 

Some facts about tomatillos:

  • They are a fruit, not a vegetable.
  • Like tomatoes, they are a member of the nightshade family.
  • Look like green tomatoes, but are closer to a gooseberry than a tomato.
  • Healthy! They have a good amount of dietary fiber, and are also rich in antioxidants, niacin, potassium, and manganese.
  • Must have two or more tomatillo plants for proper pollination to produce fruit.
  • Can be kept in the refrigerator for up to 2 weeks.
  • Come in many colors: yellow, green, red, and even purple.

Ingredents:

  • 22 tomatillos
  • 6 garlic cloves
  • 4 jalapeños, halved (optional: seed for milder taste)
  • 1/2 onion, quartered
  • 1 Tbsp of lime juice
  • Olive oil
  • Salt and black pepper to taste

Step 1 – PREPARATION

Place the oven rack at the highest spot.

Set the oven to broil. 

Rub olive oil a large cookie sheet or glass pan

Step 2 – Prepare the Tomatillos

Remove the paper husk, and place in a colander. 

Wash the tomatillos, and half them.

Step 3 – ROAST 

Place the tomatillos, onions, jalapeños, garlic on the pan.

Drizzle olive oil over the ingredients.

Place on the top oven rack for 15 minutes. 

Look at the beautiful roast on ingredients for salsa.

Step 4 – BLEND INGREDIENTS

Add the roasted ingredients, and lime juice to a blender, or food processor.

Add salt and pepper to taste.

Salsa is blended and ready!

The salsa verde is ready to eat! Best served with tortilla chips, or on tacos.
